I keep seeing these defunct or zombie MailScanner processes, does this mean there is a problem? Are they using more server resources?

Having a few defunct MailScanner processes at any time are normal and
they do not cause any problems or indicate a problem. To be sure there
is no problem with MailScanner you should "tail -f /var/log/maillog" to
check that it is scanning mail and that there aren't any errors.
